Abruzzo, Italy is noted for having an abundance of fresh produce and ingredients from both coastal and mountainous areas and these include lamb, pork, and homemade pasta. The region also has a rich culinary heritage and Chef Stefano has poured his heart and soul into creating a menu that reflects the region and its history for Thai food lovers to enjoy. Entitled ‘Traditional Cuisine of Abruzzo’, the menu begins with some appetizers featuring flavoursome smoked cheese and sun-dried tomato salad with a balsamic dressing, followed by the Spaghetti All Gitara, where homemade pasta meets rich saffron sauce and both ricotta and pecorino cheese. Main courses include Lamb Shank Braised in Red Wine and Octopus with mashed potato, goat’s cheese, and spicy tomato sauce.
